Here’s a pancake day special supper you can cook up from allotment ingredients, as recommended by Vanessa, who used to have an allotment and now continues to grow things in her garden which is more manageable time-wise.
Okonomyake or Spinach Pancake
About this recipe: This is a Japanese savoury pancake, a more substantial alternative to the traditional sweet pancake with sugar and lemon juice. Good for using up what you have in the fridge, such as a packet of bacon, or making a special filling for Pancake Day. You could use other greens apart from cabbage, kale or spinach, but it’s especially good with eggs from allotment chickens!
Preparation: 15 minutes Cook: up to 10 minutes
Serves 2-3, depending on your appetite
Ingredients
- 3 eggs
- 180g plain flour
- 1 ½ teaspoons soy sauce
- 1 ½ teaspoons sesame oil
- 95 ml water
- 1 apple
- 150g shredded cabbage, kale or spinach
- 3 spring onions
- Slices of streaky bacon (or other filling)
- Goes well with HP sauce and mayonnaise
Method
- Combine batter ingredients – eggs, flour and soy sauce -and stir (do not whisk) to combine.
- Stir in vegetables.
- Heat a large shallow pan, coat with sesame oil, pour in the pancake mix and cook for a few minutes on a moderate heat.
- Arrange slices of streaky bacon (or other filling) on top then flip over and cook until done to your taste (more liquid or more set).
- Trickle HP sauce and mayonnaise (or other sauce) over the top, cut into 2 or 3 and serve immediately.
